A lot of people are learning to prepare and enjoy whole grain dishes. Brown rice, barley, bulgur, kasha and millet offer a whole range of cancer-fighting nutrients that get eliminated when grains are refined. If you find the taste bland, mix flavorful ingredients with them. In this recipe, brown rice is jazzed up with a bouquet of spring vegetables and a fairly intense dressing. Brown Rice Salad with Peas and Red Pepper

1 cup frozen peas, thawed
1 cup long grain brown rice, cooked according to package directions
1 small red bell pepper, diced
1 small bunch watercress, chopped
3 Tbsp. extra-virgin olive oil
2 Tbsp. rice vinegar
2 small garlic cloves, finely minced
Salt and freshly ground black pepper, to taste
2 Tbsp. pine nuts, garnish

Microwave the peas on high for 1 minute. In a medium salad bowl, combine the peas, brown rice, red pepper and watercress. In a small bowl, whisk together the olive oil, rice vinegar and garlic. Add the dressing to the rice mixture, tossing well to combine. Season to taste with salt and pepper. Garnish with pine nuts.

Makes 8 servings.
