This is a very interesting discovery.

But my own research is that I normally slice out the Gees (Fats of Mutton 1st).

Then I marinate it with Xo & Honey

Add Ginger & garlic Onion grounded mix & a little of soy source.

Set aside for 45 minutes.

I would then stir-Fry it with Ginger & Spring Onion.


Obviously, I am not aware that the mix is the formular to reduce the Fat process till now.

[India News]: Kolkata, Feb 17 : A magic mix of tea liquor, honey and garlic paste can drain fat and cholesterol out of mutton, making it a healthy eat for even heart patients, Indian food technologists have claimed.

Researchers at the food technology department of Jadavpur University here said they had discovered a 'fat-reducing process' to treat mutton that could make the red meat healthier than even chicken.

Mutton has around 40 percent fat content to chicken's 25 percent, thus making the latter a healthier option for heart patients.

But Utpal Roychowdhury, head of the food technology department, said mutton treated in a two-step process before cooking - first marinate the meat in a mix of cold tea liquor and honey for 30 minutes and then dip it in a mix of garlic paste and honey for 15 minutes - could reduce the fat content by up to 90 percent.

The process would also rid mutton of many kinds of bacteria, he said.

Roychowdhury said the research had been verified by scientists from Britain, the US and Germany.

"The research paper would be published in next month's Food, Science and Technology International journal," he said.

The Indian researchers chose "easily available ingredients" for the reagents because it could be commercially viable. "We found several other reagents for the process, but they are costly," Roychowdhury said.

"Though anybody can process mutton using the formula at home," the university wants to make commercial use of the research results.

The university plans to extend technological assistance to unemployed youth to market the formula as a product.
